Vaillons is one of the most celebrated Premier Cru vineyards in Chablis, situated on the left bank of the Serein River. The vineyard is characterised by Jurassic Kimmeridgian marl and clay soils, rich in fossilised marine remains. This unique terroir gives the wines their distinctive mineral character and remarkable freshness.<\/p>\n<p dir=\"auto\">Jaffelin Chablis 1er Cru Vaillons 2023 is made from 100% Chardonnay grapes. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks (80%) and oak barrels (20%). Malolactic fermentation follows approximately one week later, giving the wine additional roundness and texture. The wine is then aged for 10 months on fine lees (sur lie), which adding complexity and subtle creaminess.<\/p>\n<h5 dir=\"auto\"><strong>Tasting Notes:<\/strong><\/h5>\n<p dir=\"auto\">The wine displays a pale golden-yellow colour. The texture is rounded, smooth and elegant, while retaining the characteristic vibrancy of Chablis.
