Description
Jaffelin Chablis 1er Cru Vaillons 2023 – an elegant, fresh and mineral-driven Burgundian Chardonnay, showcasing the distinctive character of one of Chablis’ most exceptional Premier Cru vineyards.
Maison Jaffelin is a historic Burgundian winery whose story began in 1816 in the town of Beaune (Côte d’Or). With over two centuries of experience and an in-depth understanding of Burgundy’s terroir, the estate has developed a distinctive style that combines elegance, authenticity and respect for local traditions. Maison Jaffelin places particular emphasis on expressing the character of Burgundy’s individual appellations, seeking to capture the unique identity of each wine’s place of origin.
Chablis is the northernmost and one of the most distinctive wine-growing areas of Burgundy. It is renowned worldwide for its exceptionally mineral, fresh and elegant Chardonnay wines. Vaillons is one of the most celebrated Premier Cru vineyards in Chablis, situated on the left bank of the Serein River. The vineyard is characterised by Jurassic Kimmeridgian marl and clay soils, rich in fossilised marine remains. This unique terroir gives the wines their distinctive mineral character and remarkable freshness.
Jaffelin Chablis 1er Cru Vaillons 2023 is made from 100% Chardonnay grapes. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks (80%) and oak barrels (20%). Malolactic fermentation follows approximately one week later, giving the wine additional roundness and texture. The wine is then aged for 10 months on fine lees (sur lie), which adding complexity and subtle creaminess.
Tasting Notes:
The wine displays a pale golden-yellow colour. Its fresh, delicate and mineral-driven aromatic profile reveals notes of white flowers, fresh fruit, apple and citrus, complemented by subtle hints of almonds and vanilla.
On the palate, it offers an excellent balance between refreshing acidity and ripe fruit flavours. The texture is rounded, smooth and elegant, while retaining the characteristic vibrancy of Chablis. The finish is long and mineral-driven, with a subtle saline touch and lingering citrus notes.
Serving:
Jaffelin Chablis 1er Cru Vaillons 2023 can be enjoyed now, but thanks to its structure and Premier Cru vineyard origin, it also has the potential to develop beautifully in the bottle over the coming years.
We recommend serving at 12–14°C in a large Burgundy white wine glass.
It pairs beautifully with fresh seafood, oysters, seared scallops, grilled fish, white meat served with light creamy sauces and delicate fish dishes.
