Description
Catena Zapata Birth of Cabernet 2021 – is a prestigious Argentine wine created to honor the origin of Cabernet Sauvignon and its historical journey. This wine is made from 90% Cabernet Sauvignon and 10% Cabernet Franc grapes, grown in high-altitude vineyards in the Mendoza region: La Pirámide (950 m) and Angélica Sur (1,100 m). The soils range from sandy to rocky, allowing for a unique expression of fruit character and minerality.
The 2021 vintage was marked by cooler weather, resulting in excellent balance between acidity and sugar, and enhanced aromatics. The harvest was done by hand, and fermentation took place in small containers—concrete eggs, stainless steel tanks, and French oak barrels—at temperatures of 26–28 °C. Fermentation lasted 12–18 days, with maceration extending up to 22 days to extract rich structure and complexity.
Catena Zapata Birth of Cabernet 2021 was aged for 18–24 months in French oak barrels, using a mix of new and used barrels to achieve a refined flavor balance. The result is a deep ruby-colored wine with aromas of ripe blackberries, tobacco, truffle, and black olives. On the palate, it presents round tannins, elegance, fresh acidity, and a long, rich finish with notes of cherry, smoke, spices, and vanilla. It is best served at 16–18 °C. This wine pairs beautifully with SOMM beef entrecôte, lamb, and aged cheeses.
