About the winemaker:
Xavier Vignon is a well-known oenologist around the world who produces not only his own wine but also consults other winemakers.
Xavier’s history and interest in wine began while he was studying at the Faculty of Pharmacy in Reims. There he accidentally met a winemaker who aroused the young man’s desire to deepen his knowledge in the field. For this reason, Xavier applied for a preparatory class at the French DNO (National Diploma in Oenology). Unfortunately, the number of places at this school was limited, and preference was given to those from the family of winemakers. This pushed Xavier to work in several champagne houses and gain knowledge through practice.
He later studied agronomy, viticulture. Also worked on various wineries in Alsace, Bordeaux and Champagne, where he learned the art of fine blending and tasting techniques. Finally, Xavier stayed in the Rhône Valley, set up a consultancy firm, Povidis, and produced wine in very small quantities and without any commercial structure. They were usually sold to friends or acquaintances.
Xavier’s life turned upside down when one of his friends sent his “garage” wine to the Hachette Guide, where he was rated top-rated. Since then, Xavier’s reputation has only grown, its wines attracting the attention of critics, profit awards and high ratings, and exports are expanding to 25 countries.
Winemaking process:
One of the wines of his production is the well – known Chateauneuf – du – Pape appeal, which is located in the Rhone Valley. For this wine, berries are harvested from old centuries-old vineyards growing in different areas. Grenache, Vaccarèse, Counoise, Mourvèdre, Cinsault, Terret Noir and Muscardin grapes are used in the mixture. Prolonged storage of grape juice with skins for almost a month results in an intense color of the wine, rich tannins and an expressive palette. The wine is then aged for more than 15 months in different containers, both oak and concrete.
Serving:
Xavier Vignon “Cuvée Anonyme” Chateauneuf-du-Pape Cuvee AOP 2019 can be used now or kept for another 10-15 years.
We recommend decanting and serving lightly at 15 – 17 °chilled C.
Goes well with duck confit, ravioli with mushrooms or comte cheese.
